Pelegrini
Pelegrini faces the Cathedral of St James, the UNESCO-listed heart of Šibenik’s old town. Chef and owner Rudi Štefan opened it in 2007, and it has held a Michelin star since 2018.
A chef’s restaurant in a restored palace
The restaurant occupies the renovated Pelegrini palace, also known as Tambača. Štefan, a Šibenik native, trained as an economist before he turned to cooking, and spent time in the kitchens of Gennaro Esposito at Torre del Saracino and at Arzak in the Basque Country. Gault&Millau named him its Croatian Chef of the Year for 2025, and in the 2026 Michelin Guide sommelier Branimir Vukšić received the Sommelier Award.
What to order
Dinner is a tasting menu of four or six courses, a modern take on Dalmatian flavours that changes with the seasons, with an optional wine pairing. The wine list runs to more than 500 labels, and the restaurant also pours its own “Pelegrini & Friends” wines, made with partner winemakers such as Bibich. Štefan produces his own olive oil, too.
Getting there from the yacht
Šibenik’s waterfront runs just below the cathedral, so from the town quay it is a walk of a few minutes up into the old town. From D-Marin Mandalina, the large marina south-east of the old town, allow 25 to 30 minutes on foot or take a taxi to the old town.
Good to know
Pelegrini serves dinner from Monday to Saturday, with last orders at 21:30, and closes on Sundays. From mid-May to the end of September dinner is served only on the outdoor terrace on Trg 4 bunara, the square beside the cathedral; in April and October it moves indoors. Bookings are online only. A card is held to secure the table and late cancellations are charged, so cancel at least 24 hours ahead.
